Posted: 08 Jun 2009 10:11 AM PDT My high school had lunch ladies who cooked real food and baked real bread every day. It was a small school, so we had just one entree per day, take it or leave it. One of my favorites was called Taco Crunch. As an adult I finally figured out how to make it at home and my family calls it Taco Joes. You can call it a Sloppy Jose if you like. (That's "ho-SAY," not a misspelling of Joes.) Ingredients: 2 lbs ground beef 1 packet sloppy joe seasoning 1 packet taco seasoning 1 can tomato paste water Also: tortilla chips, shredded cheese, lettuce, diced tomatoes, olives, sour cream, salsa, and any other taco toppings you love In a large skillet, brown the meat and drain excess fat when done. Prep your taco toppings and shred the cheese while waiting for the meat to brown. Turn the heat to low. Add the tomato paste, water (as indicated on the sloppy joe seasoning package), and sloppy joe seasoning. Now add the taco seasoning and the amount of water indicated on the taco seasoning packet. (You're adding water twice. Once for each seasoning packet's instructions.) Stir until blended, then turn up the heat a little and simmer until thickened. Serve over chips, then top with cheese, lettuce, and everything else. The heat from the meat will soften and melt the cheese, but if you use an oven safe plate, you could pop it under the broiler for a minute to melt the cheese before adding the other toppings. Delicious! Perfect for movie night. Makes fantastic leftovers. Serves 8 |
